STIR FRIED NOODLES WITH PRAWNS
This is one of the typical street side dishes that you
can find all over Thailand. The main characteristic
feature of Thai food is to get all their basic flavours
rolled into each dish: sweet, sour, spicy and bitter,
varying in proportions.
Ingredients -
2 tablespoons oil
1 tablespoon chopped garlic
1 large egg
6 pieces of tiger prawns, cleaned and deveined
150g flat rice noodles
1 teaspoon lemon juice
2 tablespoon tamarind juice
1 tablespoon fish sauce (or use salt to taste)
1 teaspoon sugar
¼ teaspoon chilli powder
4 tablespoons chopped spring onions
2 handfuls bean sprouts
2 tablespoons crushed peanuts
Method:
Soak the rice noodles in cold water and keep aside for 1
hour. Put the noodles in a colander and drain off all
the water.
In a wok, heat the oil and stir fry chopped garlic till
it turns golden brown. Add the prawns and stir fry on
high heat for 1 minute. Then add the egg and scramble it
for 30 seconds.
Add the rice noodles and stir fry for 1 minute till the
noodles are half cooked. Add lemon juice, tamarind
juice, fish sauce, sugar, chilli powder, chopped spring
onion, bean sprouts and continue to stir fry on high
heat till most of the liquid is dried up and the noodles
would have cooked. This would take another 1 ½ to 2
minutes.
Remove the noodles into a serving bowl and garnish it
with crushed peanuts.
