Seasons, regions, climate, religion, heritage and even medicine play a part in influencing what is eaten in India. From spicy coconut infused dishes in the South, to fish based meals in the West, vegetarian cooking in the North and Chinese inspired stir-fry in the East. There’s a huge wealth of recipes and tastes to choose from.
And, because food is such an important part of social and cultural life throughout India, you’ll find every one of the millions of people living there has a different take on what goes into the same recipe. With theirs always being the best, of course!

Our Chefs don’t just share a knowledge of Indian food. They share a passion for it. And, with each member of the team bringing their own experience and preferences to the table, there’s always something new being tasted – and debated! It’s how recipes are created in India. So it’s how they’re created here too.
You’ll find our Chefs taste testing more than their own food too. We regularly visit new restaurants, taking inspiration from the latest trends as well as traditional routes. And we’ve worked with some very well known names in the industry – learning new skills and borrowing some brilliant ideas.
You’ll taste this added inspiration in our new recipes – Thai, South American and European influences are all making themselves at home in the Noon kitchen.
