Green or Red Curry – Two
of the best know Thai dishes which have captivated Western palates. The
richness of the coconut milk, mixed with green or red curry paste
combined with the classic Thai ingredients of galangal, kaffir lime
leaves, fish sauce and Thai basil makes a winning combination when
served with steamed rice. The difference being that green paste is made
from green chillies and red paste from red chillies, the red tending to
be milder.
Pad Thai – Probably one of the most popular dishes in Thailand prepared
at home throughout the country as well as at countless street stalls. It
combines the essential Thai flavour of sweet, sour, hot and spicy.
Noodles are tossed with prawns, chicken and egg, stir-fried with garlic,
shallots, chillies and seasoned with lime juice and fish sauce. Chopped
peanuts, spring onions and coriander are the classic garnishes added to
the dish at the last moment. Great fast food!
